Torque end bolts about as hard as a spindly-armed road biker using a 3/8" socket wrench with a 10" handle. Without breaking the wrench.
To prevent overshifting the large ring adjust the angle of the front derailleur so the outer plate of the cage follows the chainline with the chain on the outermost ring and rear cog. Then adjust the outer limit screw so the chain just clears the outer plate of the front cage. If you aren't getting crisp shifts into the outer ring, then loosen the limit screw in very small increments until you can pop the chain onto the big ring consistently.
