If I went to the trouble of getting 9/10-speed wheels, I'd probably go ahead and swap out the shifters. $50 for new downtube shifters, $25 for a chain and $50 for a cassette (tops) and you're good.

In fact, I bought a nice new set of wheels for a 7-speed bike and will soon be upgrading.
