An average cadence of 100 is on the "high" side for a cat 5 roadie trying to put out max watts over 20 minutes. How were your legs when you were done?
I know that when I do those tests, I tend to spin at about 87-90 rpm. Let a little aire out of the tires, find a way to up the resistence a bit, and give it another shot... I bet you'll pull better numbers.
I didn't even look at the cadence, it seems I've trained myself to always sit at around 100 for cadence. I was in the 53x14 and it didn't feel right to shift into a smaller cog to lower my cadence for the 2x20min. test. It feels right for me to spin at 100.
