Looks like it will make a nice rider. Congrats! As for what bar and stem....that's up to you. Are you planning to restore it to original condition or do you want more modern components. The tricky bits will be the BB, headset and stem. You can take just about any quill stem and sand it down from the usual 22.2 mm OD to 22.0 mm OD to fit the French fork. I'd inspect, clean and grease the BB soon since that is one thing that is hard to fudge if it needs replacement, take good care of it. You'll probably have to find an good LBS to get the cranks off. They require a special Stronglight specific 23.35 mm crank puller to remove.
