The tricky bits will be the BB, headset and stem. You can take just about any quill stem and sand it down from the usual 22.2 mm OD to 22.0 mm OD to fit the French fork. I'd inspect, clean and grease the BB soon since that is one thing that is hard to fudge if it needs replacement, take good care of it. You'll probably have to find an good LBS to get the cranks off. They require a special Stronglight specific 23.35 mm crank puller to remove.
Yeah, I'd like to go more original than less. I will take a look at the BB soon. Looks like it came with an Ava bar originally
