I haven't found a good way to carry a big camera, but I only do sport touring, so I have limited packing space. For scenic rides, I usually put my wife's kodak easyshare in a [clean] sock and then put that in a ziploc bag. Protects it from the sweat, getting bumped, and fits in a jersey pocket nicely. Hard to get out quickly to catch an elusive bit of wildlife though...
