Bikes: '96 Litespeed Catalyst, '05 Litespeed Firenze, '06 Litespeed Tuscany, '20 Surly Midnight Special, All are 3x10. It is hilly around here!

Oval rings? No experience with them at all. I assume it will work if you make sure to include the major diameter of the ring when you wrap the chain around it.

As to using the technique you describe with conventional rings and cogs, yes, I use it for every chain I fit. BTW, Sheldon Brown also recommended that chain sizing technique on his web site.
