Don't "guilt him" into returning the parts. Demand that he do so. Keeping a thief in your life is only going to lead to trouble down the road. Get yourself out of that situation, and do it now.
So, imho:
1) Leave him. No question. Do this first. Stop spending time with him. Do not associate with him.
2) Tell him that he should man-up, find the owner of the bike, return the parts, make restitution, accept the consequences.
If he's willing to step-up and take responsibility for his error, and to make things right with the bike's owner, then you might think about taking him back. Otherwise, the sooner you are out of that relationship the better.
