I use the top Trans-It trunk bag for my lunch, and the Nashbar pannier bags on the sides for extra food, and bike clothing for changing weather (rain shell, etc). Even a pair of shoes, if needed. If you don't wear fancy clothes to work, you could easily stow a pair of blue jeans, a shirt, socks and shoes if you want.
