This past September, my wife and I did fours days in Vermont on an "inn-to-inn" tour. We told them how many miles/day, and they booked the inns (meals included for the most part), supplied us detailed cue sheets, and shlepped our luggage in a van. Worked out very well with the exception of one day in which one of those hurricanes passed through - that day we caught a ride in the van, and did some local riding in the downpour. The riding itself was not explicitly supported - but since it was just us, we went at our own pace. Inns were really comfortable and accomodating. This is the way to do it.

It was way cheaper than Trek, but we live a few hours away and just drove to the starting place with our bikes. This organization - see here is mostly one person operation, and we had previously tried to do the winter xc skiing inn to inn (seems each year we hit it during the thaw) thang with them. There are lots of other groups with varying options, sizes, and price tags.
