I've found Chris Carmichael's TrainRight DVDs very helpful - one with "Power Intervals" came with my trainer. Basically you warm up and then go 5 minutes as hard as possible, 5 minutes of rest, 3 or 4 times through. I enjoyed also that they had clips of Lance TT'ing mixed in.

I'm sure there are a number of othe good DVDs from Spinervals as well, but have no experience with those.
