I went from dual-sided SPD, to single sided SPD to SPD-SL. Dual sided is easy to get into, I wouldn't bother with single side SPD. For me SPD-SL is easiest because of how big the front hook of the cleat is. After riding SPD-SL (cheap R540) and riding my steel bike with the single sided SPD, I find SPDs scary when dropping the hammer out of the saddle. Wobbly and sloppy. Not cool.
