Not sure about the others, but I know Yakima hitch racks you can lock to the hitch. It would look a little suspicious if someone took the whole hitch off and was carrying a hitch, hitch rack, and bikes away with them.

You can also lock trunk racks in various ways. Just use cable locks and find something to lock to on your car. Or just take it off and put it inside. Trunk racks take all of 30 seconds to hook up once you have it set up and know what you're doing.
