With price of 11 speed groups running $1000-1700, it's hard to go wrong with any of the three. Let your budget and common sense be your guide.
Personally, I find that most of the SR parts offer little for the money. I use Chorus cassettes exclusively after I figured out that Ti cogs last half as long. The SR shifters have one trivial Ti part and cutouts in the brake lever that I dislike. The two combined save about 10 grams. Record and Chorus shifters are identical except for the lettering on the brake lever and quite a bit cheaper.
I find the new brake hoods much more comfortable and the front shifting is improved. The right finger lever moves much more easily and has just enough of a click to let you know a shift has been made. I have not found the RD any more difficult to adjust. Any bike requires a few tweaks on the cable tension in the first 200 miles. After that, the adjustment should hold for a long time.
Cable friction is a potential problem. The ultra low friction cables are a must for the right hand side controlling the RD.
