The Shower's Pass jacket does have a hood - the collar has velcro on the collar to attach the hood with and you order the hood separately ($20 US). I assume you can stow the hood in a pocket.
I don't know if the Double Century has a back pocket. I think the Double Century is the most packable full featured jacket, but if you're looking for something less packable but with more pockets, features, and durability take a look at their Touring jacket (it's slightly more expensive).
I'm not sure if either of those 2 have a back pocket. My Elite 2.0 has a back pocket, but it's not like a jersey because if it was everything in the pocket would get wet. The actual pocket keeps stuff dry, but it's also nearly impossible to get into while riding due to have to open the zipper.
I don't know that I'd trust any rain jacket that has removeable sleeves. Not a big deal on other jackets, but just one more point for the rain jacket to leak.
