32/32 - 36 if your really, really paranoid. 3x all around should be good. The only advice I can give from experience with rims is: stay the hell away from Velocity. The Open Pro is a champ, and my Alex R450 has been really, really good also (I did P2A on that ~420g rim).

Oh, two good builders I've used are Sean over at Sweet Pete's and Keith, of course. The only poor wheel builds I've had were from La Bicicletta, oddly enough.
