Only question would be whether or not the SRAM shifters and Tektro (non)brakes would slide on far enough to work as designed or not - if so then I'd be golden.

The answer to that question is "Nope, sorry." Those bars are for a road bike. If your 7200 is like my 7300, you need the smaller mountain bike bars, with the 25.4mm clamp and 22.2mm lever diameters. Your shifters and brake levers wouldn't fit on those bars.
