Can't speak for Moab but depending upon what you are used to, it could be pretty warm. It's not unusual for Las Vegas to reach 105 around that time. The temperatures in St George will only be a few degrees cooler than in Las Vegas. I camped near Leeds just north of St. George about three weeks ago and it was already in the 90s. Midday can be a little trying but as long as you are moving cycling is still not all that bad. Many desert campsites like those around the state park just north of St. George have shade covers for a place to escape the direct sun. Ride early or ride late and it will be more pleasant. The real oven temperatures are in mid to late July and August.
