Clincher tires + Pedal Q's

So I've got a nice beat up Cross-check that's been my loaded touring/commuting bike for a few years and I'm thinking of actually using it as a cross bike (who would'a thought?) for my first season, but I'd like to figure out how much I'd end up spending. As far as I can see, it comes down to pedals and tires.

I've got a pair of Speedplay frogs, their mountain bike pedal, but am a little hesitant about using them in mud. They do fine on my mountain bike but I haven't gotten them all that gummed up before, so I'm worried I won't be able to clip in the whole race. Does anyone have any experience using them in cross?

Also, any tire recommendations? I've got some 35c panaracer pasela's on there now which are essentially balloons, no real knobs but nice for chewed up roads. I've looked online a bit and the clincher selection seems limited.

I also have two wheel options, my touring wheelsets are 36 hole 3x velocity dyads and XT hubs. My road bike wheels are 32 hole 3x DT 1.1 rims on a Dura-Ace front and wired PT rear. I weigh ~155-160 depending on pie intake, so I think either would work. Anyone know how PT wheels hold up against mud? Seems to last about an hour in light rain before I lose connection.
