My typical salad includes:
- Spinach
- Kale
- Tomato
- Red Bell Pepper
- Broccoli
- Squash (yellow summer and/or zucchini)
- Feta cheese
- Walnuts
One protein source (usually about 100 grams worth):
- Tempeh (fermented soy - an awesome meat substitute)
- Salmon burger (from CostCo)
- Chicken
- Ground Turkey
- Tuna
Optional ingredients
Homemade salad dressing...equal parts of each:
- Oil (olive and/or grapeseed)
- Balsamic Vinegar
- Red Wine Vinegar
- Dijon Mustard
Spices (all ground fine):
- Basil
- Oregano
- Rosemary
- Thyme
- Turmeric
- Peppercorns
- Brown Sugar
I typically make two salads at once - one for right then, and one in a container that I take to work for lunch the next day.
I'm not sure how many "servings" of veggies this represents, but guess it's around 5 or 6, at least.
