My typical salad includes:
  • Spinach
  • Kale
  • Tomato
  • Red Bell Pepper
  • Broccoli
  • Squash (yellow summer and/or zucchini)
  • Feta cheese
  • Walnuts

One protein source (usually about 100 grams worth):
  • Tempeh (fermented soy - an awesome meat substitute)
  • Salmon burger (from CostCo)
  • Chicken
  • Ground Turkey
  • Tuna

Optional ingredients
  • Frozen peas
  • Olives

Homemade salad dressing...equal parts of each:
  • Oil (olive and/or grapeseed)
  • Balsamic Vinegar
  • Red Wine Vinegar
  • Dijon Mustard

Spices (all ground fine):
  • Basil
  • Oregano
  • Rosemary
  • Thyme
  • Turmeric
  • Peppercorns
  • Brown Sugar

I typically make two salads at once - one for right then, and one in a container that I take to work for lunch the next day.

I'm not sure how many "servings" of veggies this represents, but guess it's around 5 or 6, at least.
