If there was ever a perfect fit for the phrase "cobbled together", this would be it!
Clipless pedals have their advantages for "serious" riding (going far, fast, up lots of hills) but for the purpose you describe you don't need them. Unless you want to buy shoes, some people are into that. A single strap and clip is fine. I've logged many miles that way, fixed gear and/or commuting, and back before there were SPD's on a road bike. Now I'll wear SPD's when I put on the bike superhero weenie wear.
