Sorry - Presbyterian here; but 20+ years in one Jewish law firm or another (as the token goy) have, at least, given me some awareness. I find comparative religion to be fascinating.

I think that you'd be able to keep up on this ride. It's almost entirely on old rail/trail so minimal climbing...long way from Santa Fe, though. Why don't you ask at the collective? I'm sure there are group rides. Here are a bunch of NM clubs.
