We were exiting the park on a Sunday afternoon via the south (Foothills) entrance and there were hardly any cars. I've only been there once so take this with a grain of salt but it seems most traffic sticks to the north entrance.

Through the main parts of the park there were enough distracted tourists and no shoulders. Saw many people over the yellow line in the turns and a few folks doing 25 in a 45mph zone. I don't think I'd feel comfortable riding there.

But here's the part that looks fun: http://www.gmap-pedometer.com/?r=3068736

Still no shoulders but not too much traffic either
