Weight wise, the Easton EA70/Velomax Circuits you have are still competitive. You would need to go to a Easton EC90 to get significantly lighter. Mavic Kysrium ES's weigh less but only slightly (maybe 100g's) but have special spoke nipples and are not really all that aero. Circuts anyone can tune up for you if you don't do it yourself. They are a good workhorse wheel, no bling, but well built and still pretty light.
Weight is not everything but for wheels, I personally would rather have light than aero.

I second another's option to get a Ouzo Pro or equivilant fork. You will drop a pound off your bike pretty easily since you will also ditch your steel quill stem. No way you will even get close to dropping a pound off your wheelset. Also the fork should take the buzz out of the front end. I have an Ouzo Pro fork and think its great. Also, since the graphics on the Reynolds forks are understated, it should fit well with your Waterford. You can't really get a Time or LOOK fork without it all graphic'ed up.
Can't really recommend anything else, you bike as it stand is really very nice.
