Well...I made it to Veloce Velo (very nice, laid back staff, family-owned business feel) and Sammamish Valley Cycle (good choice of stock, clearly caters to the triathalon crowd) today.
Picked up a few souvenirs (fiber spoke replacement kit, electrolyte tablets, etc.), but still looking for that WA inspired jersey, sticker, water bottle (you get the idea).

If you're going to Bainbridge tomorrow, by all means visit Classic Cycles right in the little business district right off the ferry. There is a very cool classic bike museum in the back.

In terms of Washington-themed gifts, you can get a Gregg's jersey at Gregg's or a Davidson Jersey at Elliott Bay Cycles. Elliott Bay also has a huge collection of class bikes hanging from the ceiling, and it's where Davidson Handbuilt Bicycles are made:
