How to: Classic Quill Stem in a 2009 Surly Steamroller ???

Hi All
Title says it all!

I'm very close to pushing the button and buying a complete 2009 Surly Steamroller from Universal Cycles online.
Love the fact that it can accommodate larger sized tires while still maintaining that classic track geometry and the lugged fork is aesthetically pleasing to me (more lugged please!).

But with that classic look I want a classic stem!

Any suggestions?

also, any other suggestions for complete FG/SS bikes that can accommodate larger sized tires while still maintaining that classic track geometry besides the Steamroller? classic styling?
