Yeah, if only one ride, and with a mellow rider Slickrock is maybe the best bet, or Sovereign. Most of the other mellow rides IMO are pretty freakin' boring and full of sandy sections from hell on basically Jeep roads.

Any of the shops can get you a decent rental.
