I'd be really curious to see good side pics of the OP on the professionally fitted Fuji, with pedal at 3 o'clock and hands on drops and hoods.
Alsonote that bike frame angles and dimensions also affect stem legnth and seat positions. Many mid to late 80's Gitanes, like their "Criteriium" model, had very steep geometery and very long top tubes which sometimes resulted in the need for shorter than usual stems for some riders
