Don't count on that. People have been telling me that for at least 20 years. I've tried all of the above except kids. I purposely buy things with more calories and fat.

You've only been cycling a short time so your weight is still probably headed downwards. At 5'11" you're going to want to try to stop the loss before you drop too much more.

Fry a potato and add it to whatever you eat every day and it should level out. If you get much below 140, you'll look like a crackhead. Plus you'll lose muscle mass that would be handy even if you like climbing.
