My mom is actually excited, none of my bikes are her size, so she will have a bike to ride around now. And I am excited to have a winter bike project (on top of others)!
Go for it, there are plenty of parts around to fix it up and keep it stock looking. Any bike shop should be able to order the tires you need, if they don't already have them in stock.

I would think they most likely will be the Schwinn S-6 size which is different from your normal 26"x1-3/8" tires.
