The main thing I'm confused about is that you say they have bearing cages. XT hubs don't use cages (retainers), they use loose balls. Loose balls in a traditional cup and cone bearing assembly.

As for the number of balls, pack them in there until the last one won't sit down in the cup properly, and remove it. That's the correct number for hubs.
