The main thing I'm confused about is that you say they have bearing cages. XT hubs don't use cages (retainers), they use loose balls. Loose balls in a traditional cup and cone bearing assembly.
The 770-series hubs are a bit different than the older ones:

I count 13 balls on the drive side (no retainer shown there) and 11 on the non-drive side (in a retainer).
