Just purchased new wheels from a reputable and noteworthy BF'er and am awaiting delivery. I want to purchase a new cassette. I currently have a 10spd 12/23 105. A 10spd DA CS7800 12/21 is about $110 and an Ultegra CS6700 12/23 is about $100. Would there be any significant/noticeable changes upgrading to the DA?

The cassette won't last as long, but it'll be significantly lighter as the four largest cogs on DA are titanium. 105 will last longest. Ultegra probably has crisper shifting than 105 and will be a little lighter because they use an aluminum carrier for the four largest cogs.
I would stick with your 105 cassette, and when you need a different gear range, buy ultegra.
