I would probably get a custom steel or alu touring frameset that can fit 29 X 2.35 tires; Rohloff hub, disk brakes, and 700 X 32 road tires.
Or a custom carbon-fiber folding full suspension cargo bike with a 1970s Super Record gruppo upgraded with ceramic ball bearings and a Powertap crankset.
