Probably. I have one hub like that. I simply removed the 6 speed freehub ( I think it takes a 10mm hex) and replaced it with a 7 speed freehub, then added a 7 speed cassette. Worked out fine. I'm betting a Shimano 600 uses the same mounting for a 6 speed freehub as the 7 speed. It's easy to find out if you have a 7 speed freehub.
