I think it's been covered here but from my research and experience
Latex:
Faster because of less rolling resistance (it is a significant amount 2-4 watts per tire)
the lightest latex is lighter than the lightest butyl
Loses air quick - pump them up every ride
once installed correctly, puncture a little less in my experience
Butyl:
Holds air - Pump them up every few days
eaiser to install
Way more options on valve length, size, thickness, etc...
