Conver to compact crankset with 7-speed cassette.
I'm thinking of trying to convert my old bike to a compact crankset. Vintage 1989, with Shimano 600 tricolor drivetrain throughout.
Are there any issues with buying a Shimano Ultegra 6600 compact crankset and putting it on the bike?
Does it matter if the new crankset is a "10 speed" crankset with my old 7 speed cassette? Or did 7/8 speed Shimano compact cranks exist?

The crank will need to be compatible with your existing BB axle, unless you are replacing that too.
"10 speed" crank is fine, but you might need a thinner chain, like a 9 speed.

"speeds" is how many cogs are on the rear cluster, in the front there is 1/2/3 chainrings .
the "speeds" in chainrings are the teeth being thinner so the thinner chains needed to
pack the more cogs in the space formerly needed for 8, in width ..
A 7 'speed' chain in now the same for 8 or 6 or 5, the 9th addition got the thinner chain bandwagon rolling.
2 chainrings thinned for thinner chain will be OK , given you dont have much choice. (other than NOS on Auction site)

the 6600 is long OOP, you will find it much easier to source a current crank, say Claris or Sora Tiagra, which are 8/9/10 speed depending on model

Ideal is to find a new Shimano 2302 crankset. Double, compact, square taper, made for 7/8 speed, uses the same BB.
Bought a couple in the spring for around $30 each shipped, an excellent crankset.

Sugino makes fine square taper 7/8 speed compacts and stripes as well.

I should say, I'm also happy to switch out the bottom bracket (and indeed I think I need to since I think it is the source of a 'clunk' on the right downstroke...), so that opens up the options. I care about the looks: I think the old Ultegra 600 stuff looks very nice and love the chainrings with the little arches.
But what is a "stripe" or are "stripes", bikemig?
