Riding on the flat your speed is limited to your ability, not the cassette, and on the flats you are unlikely to spin out any cassette or run out of low gears. Id say get a 10sp 12-28 or 11-25 CS-HG500

I personally would go for the 12-28 as i hate mashing gears.
