Removing 3rd large chain ring with a bash guard

Hi,
i was just wandering if i removed the 3rd large chain ring and replaced it with a bash guard, would it then make it possible for me to remove some chain links because i want a tighter chain with less slack as now i am doing more downhill riding i dont want the chain to clang and bash around as much.
If it is the correct thing to do, does anyone know how many links i would have to remove and how do you do it?
I have a 27 speed set up, a long cage deore lx rear derailur, a standard shimano f. deraliur and most importantly a shimano deore hollowtech 2 crankset, so from this info can anyone suggest if it would work?
So if anyone could help, it would be very greatful.
