Depends on the brake. Some use DOT fluid, some use mineral oil.

Shimano uses mineral oil. Most of the rest use DOT 3 or 4, which can be purchased at any auto parts store.

Stay away from DOT 5 unless the manufacturer specifically says to use it. DOT 5 is silicone based and isn't compatible with DOT 3/4 systems.

And be careful. Brake fluid eats paint!

Just for completeness: DOT 5.1 is compatible with DOT 3/4.

Also, any brand DOT 3 or 4 brake fluid would work. No need to buy "name brand" when "house brand" will do.
