I pulled a bonehead move and attempted to remove a self extracting crank with a crank extractor. I ruined the threads that the piece you need the pin spanner to remove. The cranks are XT hollow tec. Do I need the pin spanner piece?

If yes, then just don't fool with it.
If, when you now try to extract the crank using the self extractor, it pulls out, then you are f'd.
If the self extractor pulls out - without extracting the crank - then you could try screwing in the crank extractor tool and see if there are enough threads left to seat the tool firmly and pull the crank.
Otherwise, you are looking at a new crank ;-((( Live and learn. I hope you messed up the NDS crank. That's a much cheaper booboo.

Don't forget that most crank extractors need an adapter for the larger hollow axles.

Yea I did not hurt the extractor at all, I only screwed up the threads on the little piece that you use the pin spanner to remove before you use the self extractor. I can not start the threads to put that back in. Can I do without that?

Huh?? How did you screw up the extractor plate? Those are male threads, as are those on the crank tool. Human practices aside, males don't do males in the screw world.
Yes, you can do without it — until you need to remove the crank. Fwiw, you can find them on eBay or as spare parts.
