Vinegar, molasses, citric acid,lemon juice, phosphoric acid, coke, oxalic acid, evaporust are all chelating agents and all work the same way - they chelate the iron oxide. They all work. The tendency to form an almost instantaneous rust coating after over treatment can be reduced somewhat by soaking the item in a solution of Vit. C.
