XT Mountain Hub with Ultegra Cassette?

I am thinking about upgrading the wheels on my Surly Cross Check. My question to the folks on here who know more than I do is this, can I build a wheel set with an XT (non-disc) mountain bike hub and still put a 10-speed Ultegra 12-27 cassette on it and expect it shift well. I am running ultegra double front and rear derailers. I know the surly frame will accommodate the 135 rear spacing I just wasn't sure if my cassette will fit. Also, will this allow me to build a wheel with less dish since the rear spacing would be 135 instead of 130?

I don't see why it wouldn't work. Tour bikes commonly run 10 speed cassettes on mountain hubs.
