Fork Upgrade
I plan to upgrade the fork on my hybrid bike (700c). Does anyone make a good carbon fork that can be used with V-brakes? Or can I convert to cantilever brakes, using XTR shift/brake levers? Michael<><

You'll want to look at cyclocross forks. There are quite a few carbon ones. Check out the Winwood Muddy Cross Fork.

Mike,
I know Winwood does make good quality forks but they are somewhat expensive. I found a site that sells cyclocross forks (both alum and carbon) for a very steal price. their forks are for both disc and v/canti brakes as well
https://www.ridesoul.com/components/stiffsterfork2.html
it's only $95 (free shipping) plus a 3 year warranty. I think that's a steal right there. I'm actually going to buy their carbon fiber fork when I get my funds. Hope this helps.
