Swapping out cassette question.

I want to swap my 12/25 cassette for a 12/27. The rear deraillieur is a 10 cog Ultegra, front deraillieur and shifters are 105 group but I'm not sure what group level the cassette is. Does the new cassette have to be at the Ultegra level also or could I use the newer 105 6700 cassette?

Bikes: 2011 Lynskey Sportive, 1988 Cannondale SM400

No, it can be any 10-speed Shimano or Shimano compatible cassette.
