Easy upgrade from Avid bb5 to bb7?
I'm wondering if I could just buy the bb7 calipers and swap them out for the bb5's. Can you do this and leave the discs, cables, levers, etc in place?

I think the mounts are the same. I see no reason why not. Calipers without rotors sometimes show up on eBay.
Make sure you buy the correct ('road'/'mountain') BB7 for your application (they are intended for different levers).

Just have to bed the new pads in ... note BB5 has a barrel adjuster the 7 does not.

I have found, and heard from others, that the pads on the bb5s wear at an angle. This makes it difficult to adjust them without getting some drag on the rotor. I've heard the 7's don't wear at an angle.

Can you do this and leave the discs, cables, levers, etc in place?
Brake power is generated by the friction material on the pads embedding into the surface of the rotor, re-bonding to the friction material still on the pads and then breaking apart or shearing. In order for this bonding/shearing to occur, the friction material must first be displaced onto the surface of the rotor. This typically happens during the first 10 – 50 stops of a brake system and is referred to as “burnishing” the rotor and pads. When a rotor is cleaned, it will need to be re-burnished again to re-deposit the friction material onto the surface.
With the BB5 as the outer pad wears you move it closer to the rotor by turning out the barrel adjuster on the caliper, with the BB7 as the outer pad wears you move it closer to the rotor by turning in the outer pad adjuster dial.
