Raising the stem in general, because the steerer tube angles back, the bars are closer to the seat.

Well, you're a lucky girl. I see why that is your favorite shop. Around here you would only have so much variety in terms of components, everything else is special order. Surprising for a city where cycling is quite developed, but I guess it's a risk for a bike store to carry too much inventory.

I bought the bike across the border since Bianchi doesn't import the Volpe here, so I couldn't go to the store where I bought it (although their 1 year post-sales service and support is still good, they are about 8 hours away).

Yours, Dabac's, and Fietsbob's point about the length of the adjustable stem and the handlebars moving back is a good one, I'll have to consider that too. Although I can see how, if I want a more upright position, the handlebar being slightly back (closer to me) is just a natural consequence. If my torso moves back, that would increase the distance between the torso and the handlebars, resulting in the arms being more stretched. The handlebars moving slightly back as I raise them with the adjustable stem may actually be a good thing.

There's an internal, quill stem fashion and one external, wraparound fashion. Don't know if I'd dare use an internal on a CF steerer, but the external should be OK - although admittedly not exactly sleek.
OP; +5 on dabac's suggestion.

In the old days this would be a "let me google that for you"

Today; Go to www.amazon.com and search for steerer extender and find that there is a **** of them. If you then have questions, post them...

BBB does not currently have a U.S. distributor per Bike Mine/Vittoria, their former U.S. distributor. Their Canadian distributor, Great Western Bicycle Company out of Vancouver, confirmed this and said that they cannot ship BBB parts to the U.S. I was very disappointed to hear this because I was in the market for a BHP-21. Plus, I like their stems and other stuff.
