The thicker the tube, the less chance of a puncture, but I don't know about pinch flats. After going through like 3 tubes a month with slime in them I switched to a set from my LBS that's comparable to the Dan's Heavy Duty tubes (thick on the bottom, thinner on top) and I've had them for a good couple of months without any incident.

Run the front and back the same unless you have 2 different rim sizes, which I have no idea about. The tubes cost more, but I haven't had to replace mine at all since I got them, while with regular tubes I'd be replacing them pretty frequently, so I've gotten my money's worth. You can also try tire liners like this https://www.danscomp.com/449000.php?cat=PARTS but I've heard of mixed results with them.

thicker tubes will help with pinch flats but not very much, the higher the psi tire the less you have to worry about pinch flats the thicker/heavy duty tubes aka puncture resistant will help with thorns but not always, but they weigh alot more, the bigger the tire the bigger the tube because as the tube expands it gets thinner so if you have a 1.75 tube in a 2.25 then the tube is going to be thinner, but most tubes are universal like a 1.75 - 1.95 or 2.125 the smaller tire in back is so you can get plenty of clearance in the stays of the frame, and also some times for the chain, and the bigger tire in front for more traction when your carving taking sharper turns, ect, i would say that the biggest in back would be a 2.1 but you dont really need it, i run a 1.95 in back and a 2.2 in front

Primo Walls are good for pinches. I haven't gotten a pinch yet. I have gotten a couple thorns but not as many as I did before I had the Walls.

dont ever get slime or fix-a-flat, its all a waist of money and they are the biggest pain when they pop cause they never work and they slime gets everywhere
