Two sets sold on eBay, just search completed auctions. Note, NOS with original box will bring more, so if you don't have the original box, price is less.
And totally ignore PB bikes sale, unless you are extremely patient. PB will re-list items for several years until they eventually sell. I've been watching a set of pedals he has been trying to sell for 3 years (I have an identical set, figured they were worth about $40, he asks $500).

It depends on what you're asking. Very, very few people want them and they're less rare than you may think. I knowingly overpaid for mine (not PBBikes overpaid, but over paid) because I got tired of being patient. Not many bikes used the stuff and most folks didn't want the stuff. Early Shimano doesn't have the collector appeal that Campagnolo does. This is a cheap group and group focused on practicality...I wouldn't get my hopes up to be honest.
FWIW I think I paid around $200 or so for my set and did not consider that a great deal. If you put it up for auction on eBay, I'd expect around 150-250 on a 7 day sale. This assumes the grey gums and in box. The Browns are less desirable.

+1 Too niche of a market. Trade convenience for $$. You decide. Silly high NOS prices are an eBay phenomenon. The average user knows that when putting parts on a 30 year old bike, NOS is no longer NOS once they are mounted, and unless the rest of the bike is NOS, what is the point?

I would say $150 or so on Ebay is realistic. As others have said here on the BF's you won't get the NOS premium most of the members are to savey to pay a NOS premium on these.

There are people...not many, but they exist, who will crawl through glass for the grey hoods...but it won't be a fast sale.

Bikes: No-name LH drive track. Also ride an Exxon Graftek, a Masi, a Trek R200 or a RR Boneshaker for fun!

You say they are gum hoods so may I assume they are brown?
Agree with all of the above on pricing, I managed to get a single caliper (one, not two, with no levers) for $50 to make my incomplete system whole.
Also be aware that they have unique pads that are VERY hard to replace and the stopping power is not wonderful even when new.
Mine hangs on the wall as I can't afford replacements or hospitalization.
