SCOTT Comp Racing MTB ?
I have a SCOTT Competition racing MTB I'm guessing is from the late 90's maybe earlier 90s its got Shimano Deore LX rear derailleur, as well as the front derailleur, 3 x 8 gearing with s Shimano twist shifter , Deore cantilever brakes Grey paint with yellow graphics ....and Rock Shox Judy forks , Mevic 26" rims. Does anyone know what years this bike was made and what it sold for ? What if any current value ? I contacted SCOTT about it and they said it was from a time prior to the sale of the company or the company moving, I don't recall, but they don't have any record or information on the bike ? Hmm? It's a great bike?

Google component date codes and look them up. That will typically get you within 6 to 12 months of the actual date on the bike. 20+ year old MTBs tend to have minimal value. MTB enthusiasts want the latest/greatest.

Difficult to guess without photos, anyway:
3x8 Deore LX is the M565/567 series, if I remember correctly, first out in 1995 (prior was also black M56x, but 7 speed).
1994 the Comp Racing was 21 speed, so not this case.
Scott Comp Racing of 1995 has this black groupset, could be with rigid fork, or optional Rock Shox Mag21. It is grey with yellow Scott Racing and black Comp. It had gripshifts, at least here in Europe.
1996, Scott logo moved to down tube, the Comp Racing had the option of Rock Shox Quadra in the CST version. The CST version is aluminium, regular Comp Racing Chromoly, but regular Scott Racing has XT rear derailleur, while CST has the LX one you have.
1997 and 1998 Comp Racing is aluminium, 1997 having Rock Shox Indy XC and 1998 Rock Shox Judy. Also, both these years have V-brakes.
Hence, the last years for cantilevers on Comp Racing was 1996, the colour match would indicate 1995 version with later added fork and other possible changes.
In 1995, the Comp Racing was 3rd in the Racing series (1st Pro Racing, 2nd Team Racing). No idea of current value, would say abut the same as any other mid range MTB from the 90s. And, these Scotts are really nice to ride, in my opinion.
