This was such a pretty bike. Had been taken good care of by the original owner, paint was perfect. I just added the new saddle, cables, housing & bar tape, tires & tubes, bearing service, and laced a modern hub to the rear rim for 10 speeds. 85's had the burnished seat stay caps, hand painted lug lining and anodized finish on the components. Also took a 28 size tire, which was a plus. Alas, too large for me...

I love looking at each of my bikes. Aesthetics are an important aspect to riding - for me they lift my spirit higher but that being said I have one this bike that won't get ridden very much. Reserved for the best of days:

My 1970's Peugeot, got it in '75 at college. Not sure which model. Frame and fork only original parts. Sugino Mighty crank, Suntour Cyclone front & rear deraillers, Shimano 105 brakes, SR Royal stem, handlebars & seatpost, Schwalbe tires, Interloc 5 sp freewheel, Serfas seat, Weinmann 27 x 1 alloy clinchers, Shimano SPD-R540 pedals & Zefal Competition pump. I like to ride it as much as my other bikes.

well I've never ridden this one. I do like to look at it from time to time. It's the most energy an money I have ever put into a restoration.

There are a number of awesome bikes shown on this thread! I will do a variation on the OP's request by saying this is a bike that I enjoy looking at and riding. I should be bothered by all the scratchs, chips and failing decals but it somehow is very attractive to me and I just can't get over it! There are others bikes that are near perfection that are just gorgeous, I just can't get there from here.

But it has already been fitted with cyclocross knobbies (and modeled by a fellow forumite)

Yes, I've had a few of these. I loved looking at them but wasn't riding them enough, so I sold them. I've replaced them with others I don't ride enough.

This one is getting the axe soon, at least for a while. Was fun to build, fun to ride, fun to look at (for me at least). It makes a great pickup truck, problem is I don't really need a truck atm. The drivetrain, wheels and a couple odds 'n ends are moving over to something a bit smaller and much lighter. They may find their way back at some point...

I do ride my bikes, although none of any one as much as it deserves, and I love staring at them.
As for one I'd rather stare at than ride, I finally saw a Confente in the flesh at Eroica California last month (it won Best of Show or whatever they called the award at the Councours). Absolutely stunningly beautiful. The reason I would never ride it is (1) I don't own it and (2) even if I did, I could never see risking damaging a bike that any number of collectors would pay stupid amounts of money plus throwing in their spouse and at least three of their kids to own. I don't have anywhere near enough coin that I'd be willing to risk having to make good on that putting the first scratch on it.

As one that fits the criteria of the thread, my '86 Schwinn Peloton fit the bill. It was gorgeous, but wasn't my favorite ride and paint ages not so gracefully, so I couldn't bring myself to keep it for a long time .

This is just a 57-year-old Austrian, fairly rare in North America, with plain gauge 531 tubing and a 13-year-old CyclArt paint job, but it got a lot of admiring glances, and even a photoshoot, at yesterday's classic 1910s to 1950s wooden-bodied or wood-trimmed car meet.
